On a personal note…..Today is my niece Elizabeth’s 3rd birthday. We had an amazing family vacation last week and celebrated her birthday early. She, Uncle Nick and I made vanilla cupcakes with chocolate icing and sprinkles. After adding all the ingredients into a big bowl, I handed her the fork and she stirred and stirred and stirred. Then she placed the cupcake liners in the pan and pointed at the one that she is going to eat. She has quite the gift for gab and proceeded to explain that she was going to have only one cupcake. One cupcake? Really? How many was I going to have? One, she said. After I named everyone in the family and learned that everyone was to have only one, my dad responded, “Wait a minute!” I must admit that my love of chocolate is genetic (coming straight from my dad) but when she says “You get one,” and it is her birthday, we had to listen.
Cake and birthdays are her favorite – just look at her face just after she blew out her candles.
Since we had leftover cupcakes the next couple nights, whenever it was time for dessert, Elizabeth requested that we sing “Happy Birthday” to her again. She even asked for more candles to blow out. Does she know how to do it right or what?

A lavender farm on the island – the smell was amazing. Even the buzz of a gazillion bees was intoxicating. And Elizabeth is a happy girl.
Happy Birthday big girl! Uncle Nick and I love you!
